You know how whenever you move into a new place you will normally find a few odd and ends left behind from the previous tenants. When Matt and I first moved into our house about 4 years ago one of the things we found left behind was an odd looking specialty cookware pan. We didn't have a clue as to what it was for, but we kept thinking that some day we would figure it out. And then maybe use it for whatever cool purpose it was designed for. It was put somewhere out of sight and forgotten. Then we started remodeling the kitchen and discovered it again. It was then placed in a new out of sight resting place, that apparently was within easy access of Levi. It became one of his favorite new toys to pull out and make noise with. So after being reminded of its existence day in and day out, thanks to our very active son, I finally took the time to search the web for its purpose.
This is a poffertje pan. Poffertjes are otherwise known as Dutch mini pancakes.
I also looked up a recipe to make the poffertjes. Even though they are called Dutch mini Pancakes, you don't use regular pancake batter to make them. Most are made with buckwheat and yeast. Because we don't normally have buckwheat flour, I found a recipe that doesn't call for it. The hardest part was trying to turn them because they were so small, and so close together. But I'm sure it will get easer as I cook them more. They tasted terrific! The taste is similar to pancakes, but I think I've decided that these are better.
